The fruit was handled as gently as possible, and after picking was hand-sorted and pressed to small holding tanks.Once each variety was harvested a juice blend was created from different portions of Chardonnay, Riesling andPinot Gris. The juice blend was naturally fermented in 500 litre French oak puncheons with the wild yeast foundon the fruit. Following primary fermentation the wine went through malolactic fermentation, which occurrednaturally during 13 months in barrel.

The complex nose shows fruit, spice, and floral notes. The palate is rich and textured with a structured elegance,the acid providing a clean lengthy finish. This wine evolves beautifully in the glass and is drinking well now, butshould have the potential to reward cellaring.
