Deep ruby red. Ripe red fruits with hints of mocha, vanilla and cinnamon spice over an earthy base. The palate reflects the aroma with ripe cherry stone, earthy underlying complexity and delicately spiced finish.
Harvested in the cool of night, and gently destemmed to fermentor for a period of cold soak to stabilise colour and enhance palate texture. Fermented gently to ensure a soft silky texture was secured, then basket pressed to barrel for maturation. Gently fined prior to bottling.
