Complex and powerful, yet subtle and elegant. Moda, or method, of drying the grapes before crushing creates a wine which will age for 12-15 years.80% Cabernet Sauvignon and 20% Merlot, from the company’s two McLaren sites, the Cabernet air-dried for one to two weeks, then fermented to 15% alc., the wine aged 20 months in 50% new French and American oak.Near impenetrable black red, this has a full, weighty and densely concentrated nose of ripe black plums and blackcurrants, melded with earth and savoury bramble and game elements. Full-bodied, with a solid constitution, this has masses of ripe black fruits, identifiably Cabernet Sauvignon cassis notes intermingling with plums, spices, liquorice and oak cedar. Richness is the feature, but there is significant extraction. Waves of flavour unfold from the core and are lifted by good acidity that becomes more prominent on the long and sustained finish.
