Bright, very pale straw colour with slight green hues, near colorless.
The nose is very fine, elegantly proportioned and tightly bound with cool-spectrum grassy and nettle-like fruit aromas, lifted by piquant herb elements. Delicate gooseberry fruit and spicy green stonefruits emerge, along with minerally notes.
Dry to taste, a taut and concentrated core of nettles, spicy stonefruits and cut grass shows good lusciousness, the fruit lifted by bright and precise acidity. The fruit is supported by a soft, textural line and the mouthfeel is one of balance and energy.
The wine carries through to a finely concentrated finish with sustained herb and spice nuances. This is an elegant, taut, cooler Sauvignon Blanc with sweet fruit and a balanced mouthfeel.
Match with seafood and Mediterranean fare over the next 2+ years. Early picked and late-picked fruit indigenous yeast fermented with 20% in older puncheons with full solids to 12.5% alc.
