WINEMAKING DETAILS -The fruit was handpicked from a select, sloped part of the Red Shed vineyard in Bendigo, in perfect condition with a lovely natural acidity. Whole bunch pressed, it was cool fermented then stopped at 30g/L.
AROMA AND PALATE - Le Fou is awash with aromas of lime and citrus blossom. Vibrant, rich and full of character, its palate is concentrated with a seam of bright minerality. The finish is quenching, crisp and lively.
CELLARING AND FOOD MATCHING - With its pure profile, Le Fou will last for a long time in the cellar. Match with fragrant curries, seafood dishes or richly textured cheeses.
