The China Terrace vineyard in 2011 gave an even sized crop with uniform ripeness. in the fermenter, we incorporated a mixture of whole cluster percentages, and had a soft extended period of maceration totalling up to 30 days. Following pressing, the wine spent 10 months in 40% new French oak. It was bottled without fining, filtration or cold stabilisation.
AROMA AND PALATE:
- The color is medium toned Pinot Noir, with lovely clarity and consistency.
- A delightful bouquet follows, with a sweetly floral lift layering red fruit, leather, and five spice.
- An expressive ripe fleshiness envelops the front palate, which is then, as is typical for this vineyard, met with a beautifully interwoven savoury sweep of structure.
