Charcoal Gully is a nine hectare family owned single vineyard located near Cromwell in Central Otago. The vineyard is located on old river terraces with soils a mixture of well drained shallow sandy loam and stony sand.
The fruit was hand harvested on 3 April 2012 at 25.2 brix and was destemmed, crushed and held on cold for 24 hours of skin contact time.
The fruit was then pressed and the juice inoculated with selected wine yeast. The fermentation was stopped retaining around 5.5g/L residual sugar.
