All handpicked fruit was whole-cluster pressed to maintain finesse, while the machine-harvested fruit was crushed and pressed in a membrane press. Each component was cool fermented separately with selected yeasts and stopped when the residual sugar and alcohol levels were in balance.

Aroma and Palate
- On the nose the wine displays lifted aromas of old-fashioned roses, musk and hints of exotic spices.
- The palate is highly textured with intense stone fruit and tropical flavours and a lingering root ginger finish.
Cellaring and Food Matching
- This wine can be cellared for up to five years and matched perfectly with Sashimi and pickled ginger.
